1. Risk assessment approach. The case of mycotoxins and cereals

Risk assessment is a step-by-step process, based on key points such as hazard identification and characterization, population exposure data –, cross-referencing food contamination data specific to the diets of population groups, and finally, risk estimation.

Mycotoxins are products of secondary mold metabolism. Toxigenic molds can grow in any climate, on any solid or liquid substrate, as long as nutrients and humidity are present (water activity A w greater than 0.6), hence the wide variety of contaminated food substrates.
