11. Step 11: Establishing Verification Procedures
This verification is often defined as follows: “the application of methods, procedures, tests, and other evaluations, in addition to monitoring, to determine compliance with the HACCP plan.” In fact, it involves verifying both the compliance and the effectiveness of the system implemented as part of a continuous improvement process.
According to the Codex Alimentarius, the main verification activities are:
auditing the HACCP system, including the hazard analysis and the HACCP plan;
review of monitoring records for CCPs and PCs (or equivalent concepts);
calibration of equipment;
targeted sampling and analysis of products;
sampling and analysis in the production environment.
