12. Step 12: Establishing a Documentation System
Implementing a documentation system is important to demonstrate both compliance and the validity of the HACCP plan that has been put in place. This may serve as evidence if necessary. Well-maintained and regularly updated records are always a sign of the organization’s good management and professionalism. Primarily, four types of records must be maintained as part of an HACCP system (Figure5):
the one containing the basic documentation used to develop the HACCP plan, including documents related to current food regulations;
records resulting from the implementation of the HACCP system, including, in particular, monitoring records for CCPs and PCPs, as well as related records (deviations/corrective actions and nonconformities/improvement...
