6. Principles for developing M0–, and M3 categories

6.1 Objective

To date, the proposed approach has not introduced any simplifying assumptions regarding the packaging’s geometry, its composition, transfer mechanisms, or interactions between substances.

Only the thermodynamic description of mass transfer has been linearized to allow the use of concentrations as transfer potentials in place of chemical potentials.

Furthermore, the description of equilibrium has been modified in the case of pre-existing contamination of the food: contaminations are strictly additive between stages or, to put it more simply, the packaging never contributes to decontaminating the food.
