3. Concentrate storage

Concentrate storage has to meet a number of constraints.

  • Extreme temperatures should be avoided. High temperatures lead to evaporation of components or chemical reactions, while low temperatures cause gelling of aqueous components and risk separation of additives. In addition, natural fats generate waxy deposits.
