ABSTRACT

Bacterial polysaccharides are complex polymers which provide the organisms that produces them with a competitive advantage regarding its environment. However, despite their relative abundance, there are few polysaccharides which present original properties allowing for the development of industrial applications. Since 1990, few new polysaccharides have been developed, as the existing polymers cover the demand and the development of a new polymer is costly and complex. However, a new exopolysaccharide (EPS) with commercial applications has just been developed.
