4. Industrial enzyme applications

The fields of application for a number of industrial enzymes were presented in Chapter 1. The main areas of use are the detergent and starch industries, the food and feed industries, fine chemicals and the healthcare sector, as well as the analytical and sensor fields.

4.1 Detergents

The use of enzymes in the detergent industry represents the most important industrial application in terms of both value and quantity.

The most commonly used enzymes are proteases, but many other hydrolases can also be added to preparations to help remove a wide variety of stains.
