5. Bakers' yeast for custom lipid production
Microorganisms currently being studied or already used for lipid production for green chemistry and biodiesel range from bacteria (Streptomyces) to single-cell eukaryotic cells such as algae and yeast. As far as the use of yeast is concerned, two approaches are possible. Firstly, the use of oleaginous yeasts, which have high lipid accumulation rates (see above), of which 25 species are currently known (out of more than 600 recorded yeast species) ( 1 ).
