  • Xanthan gum is classified as an additive, not as an ingredient, because it cannot be assimilated by humans.

The role of an additive must be considered on 2 levels:

  • during the process, it may be added in order to facilitate certain unit operations in the manufacture of the product. On the other hand, if it only has a functional role in the finished product, the impact of the properties it confers on the product, during the manufacturing process, on these unit operations must nevertheless be considered;

  • in the finished product, as a functional agent (stabilizer, viscosifier, etc.).
