4. Applications in the food industry

The description of a few evaporators installed in different food sectors illustrates the diversity of the equipment used, and the range of constraints that need to be taken into account when choosing the right type of evaporator. But first, let's take a closer look at the materials used.

Materials of construction are selected according to the application concerned. Particular attention is paid to corrosion problems, which depend on the product to be concentrated, operating conditions, washing procedures and equipment manufacturing methods.

When the product is a "foodstuff", the materials (metals, elastomers for seals, plastics) must of course be compatible and in compliance with European regulation 1935/2004 on "materials and articles intended to come into contact with foodstuffs", which also lays down traceability requirements.
