3. Choice of micro-organism

The baker's yeast Saccharomyces cerevisiae was chosen as the biological model because :

  • its intensive use in the agri-food and biotechnology sectors;

  • its identification as a potential source of contamination in many food products;

  • its definition as a target micro-organism in European regulations on surface hygiene;

  • its high resistance to biocides, which is further enhanced by prior adhesion to stainless steel;

  • and its ability to adhere to different substrates and form biofilms.
