The collection of know-how consists of transferring knowledge from an "observed practitioner," in this case the expert responsible for operating the ovens, to an "observer," the person responsible for collecting the information.

The method for gathering and formalizing the expert's know-how in terms of product measurements and process actions consists of four main phases, as shown in Figure
