2. Reducing losses

Reducing losses and limiting rejects involve two essential recovery applications:

  • extracts during must clarification after boiling;

  • beer from tank bottoms (fermentation and maturation).

The recovery of tank bottoms is the historic membrane application in brewing.

2.1 Extract recovery

Beer is classified and taxed on the basis of its original gravity. The latter, determined on the finished beer, is a function of the quantity of soluble matter extracted from the raw materials during brewing.

A beer can be downgraded if extract losses are too high, which shows the value of extract recovery from the various by-products...
