6. Detection and traceability

6.1 Research methods

Several types of research methods are available, depending on whether you're interested in the allergen itself (the protein), or in the presence of the allergenic substance by searching for the DNA of the animal or plant variety responsible for producing the allergen.

Sulfite and lactose can be detected by direct chemical assay.
