7. Overview of the main applications in the food industry

For almost 30 years, crossflow filtration has been an essential industrial tool in food technology. The main applications are in the dairy sector (30 to 40% of the market, a share equivalent to that of industrial fluids) for whey protein concentration, milk protein standardization, etc., far ahead of bioproducts (10%) and other food products (6%): beverages (wine, beer, fruit and vegetable juices and concentrates); egg products.

The reasons for this tremendous industrial success are manifold, and involve different levels of break with conventional food processing.
