4. Conclusion
This article highlights the innovative nature of NMR spectroscopy and imaging methods for studying salt content, mobility and localization in foods. In addition to the diversity of information provided, the non-destructive nature of NMR is a decisive advantage for analyzing the evolution of the same sample over time.
