3.1.1 Presentation of the toxin

Aflatoxins are a group of 18 structurally related compounds (an assembly of one coumarin and three furans). They are produced by a mold of the genus Aspergillus. Aflatoxins are not very sensitive to most heat treatments (freezing, sterilization, pasteurization) or drying processes (dehydration, freeze-drying)
