10. Step 10: Identification of Corrective Actions and Corrections
Broadly speaking, a corrective action is often defined as “any action that must be taken when the results of monitoring at CCPs indicate a loss of control.” Control (or a controlled production situation) is defined as “a situation in which the methods followed are correct and the criteria are met.” This is also referred to as a deviation from an established intent, to describe a loss of control, or “lack of control.”
The HACCP team must therefore pre-determine the actions to be implemented when the monitoring system(s) selected in Step 9 reveal a deviation or discrepancy. These actions are referred to by different terms depending on the standards used (Box 5). This step must be highly structured and organized for two reasons.
