9. Step 9: Implementation of a monitoring system

A monitoring system is a formalized system that combines observations and/or measurements to track the proper implementation of critical control measures at CCPs (against critical limits) and/or supporting safety measures related to points of attention.

Such a system makes it possible to detect any deviations in the production process and ensures product safety.

For each CCP and each Point of Attention, the HACCP team describes the means and methods for conducting the observations and measurements that ensure control. It is therefore necessary to select monitoring methods, equipment, and procedures. This selection should involve asking the following questions:

  • the validity of the measurements taken;

  • the implementation of a metrological plan.
