High Brix technology

This technology uses tangential membrane filtration to achieve dry matter concentrations of 30 to 40%. In fact, while this is the case in theory, in practice it is recommended not to exceed 38%, at the risk of membrane clogging problems. The main justification for this strategy is to reduce the energy costs of concentration, with a filtration technology that consumes much less energy than boiling evaporation, which requires a change of state in the water. Indeed, to evaporate 1 kg of water at atmospheric pressure, 2,244 kJ/kg of evaporated water must be supplied, which is relatively high, unless an electric evaporator is used.
