Traceability therefore has its rightful place in the food supply chain, in the system developed by public and private authorities to manage health risks. It is a tool for managing health risks, occupying an important place in the system put in place. At the crossroads between a commercial and industrial information tool, and a secure data medium for the food supply chain, the standards on which it is based are legal, professional and technical in origin.
