7. Conclusion

Water is the most regulated and controlled foodstuff in France and Europe. However, consumers don't always trust water from the public distribution network. Health crises have led to mistrust among consumers.

We mustn't forget that water is a very good solvent, and that it is a product that is constantly recycled by our planet. We must always bear in mind the notion of the water cycle.

High-performance analytical methods enable us to detect ever-lower concentrations in water, so much so that substances of anthropogenic origin (drugs, endocrine disruptors) are now regularly found in surface water and sometimes groundwater.

European regulations have taken these substances into account from an environmental point of view.
