2. Exopolysaccharide production

This production is generally carried out in two phases:

  • a laboratory phase to obtain sufficient quantities of biopolymers to determine their chemical composition and main physico-chemical, rheological and biological characteristics;

  • a transfer phase, preceded by optimization work, towards industrial production ranging from 500 L fermenters to volumes > 10 m 3 (or even 30 to 50 m 3 ) (figure 7 ).
