2. Processes and methods for reducing energy consumption

For organizational reasons linked to farming methods, and then to industrial performance, the malting and brewing professions have been separated. Malting and brewing are carried out on separate sites.

2.1 Malting

Beer is a fermented cereal-based beverage, flavored with a minimum of hops. Cereals, essentially barley, need to be malted to develop the necessary enzymes and prepare the starch for saccharification to produce the necessary fermentable sugars. Malting involves germinating the barley and then drying it to stop the young plant developing.

Malt provides both starch and the enzymes needed to break down starch into fermentable sugars: 1.22 tonnes of barley at 15% moisture yields 1.79 tonnes of green malt at 45% moisture, then 1...
