1. Stainless steels in the food industry

This section reviews the steels used in the food and beverage industry (AFI) and indicates the choices to be made regarding their surface finishes.

1.1 Shades used

Stainless steels have been widely used in the food industry since the 1930s. This is due to the properties of these materials such as :

  • their resistance to corrosion and ageing in most environments, which are often acidic and contain chlorides;

  • their chemical neutrality, which prevents organoleptic changes in food;

  • their ability to be cleaned and disinfected, which means low maintenance costs;
