Date fruit by-products are known to be useful for the production of high value-added components such as xanthan gum, a polymer consisting of D-glucose, D-mannose and D-glucuronic acid, in the molar proportions of 2, 2, 1, partially acetylated and pyruvylated. It is classified as a texturizing agent, in the category of additives and not ingredients, as it is not assimilable by humans.
