With a view to ISO 9001 certification, should we take into account the management of all the company's documentation, or just the specific quality documentation (manual, quality procedures, etc.)?

There's the ISO 9001 requirement and audit practice or case law. The standard says: "the documents required for the quality management system must be mastered". Some professionals and auditors understand this to mean all the documents needed to supply products that meet the required specifications and satisfy customers. Others limit the scope to documents produced as part of the quality process (manuals, procedures, quality forms). The choice is yours!
