1. Presentation of cyclodextrins

Cyclodextrins are naturally occurring chemical substances frequently encountered in our daily lives. They are molecules derived from the enzymatic degradation of starch, more specifically amylose. They were discovered by chance in 1891 by the French chemist and pharmacist Antoine Villiers, during experiments on the degradation of potato starch by butyric ferments.
