1. Food safety issues

"Food safety" is sometimes replaced by "food security", a term which can be a source of confusion, as it refers to the security of the food supply. "Sécurité sanitaire des aliments" actually stands for "food safety", sometimes translated as "salubrity".

1.1 A public health issue

Food safety is a major issue (Conseil économique et social, 2001). It is first and foremost a public health issue. It is difficult to count the number of deaths, illnesses and temporary disorders of varying degrees of severity that are directly attributable to food and, even more so, to food as a whole: monitoring and diagnosis are difficult because the effects can be spatially disseminated, delayed in time, and non-specific.
