3. Fraud

Honey is a natural product harvested by bees, from which it is impossible to extract or add anything [worldwide regulations [60] , European directives 74-409 and country-specific regulations (see )]. However, a number of exporting countries and a few unscrupulous producers do not hesitate to contravene these regulations. The main types of fraud to be considered are of a physico-chemical, botanical or geographical nature.

3.1 Physico-chemical fraud
