Within the meaning of decree no. 2015-902 of July 22, 2015, "honey is the natural sweet substance produced by bees of the species Apis mellifera (order Hymenoptera), from plant nectar or secretions from living parts of plants or excretions left on them by sucking insects, which they gather, transform, combining with specific materials of their own, deposit, dehydrate, store and leave to ripen in the combs of the hive. With the exception of filtered honey, no pollen or other constituents specific to honey should be removed, unless this is unavoidable when eliminating foreign organic and inorganic matter". Bees of this species live in a highly structured, hierarchical colony, where each member has a specific role: worker foragers, ventilators, cleaners, feeders, architects, sentinels... not forgetting the queen
