Feeding or obtaining food has long been the main occupation of human beings. This act is often considered the first human need to be satisfied. With the passing of time, concerns have shifted from quantity to quality. This is partly due to the evolution of the food chain and the media coverage of recent food crises. Against this backdrop, the agri-food industry will need to capitalize on all the dimensions conveyed by food products, and anticipate changes in both raw material production and consumer expectations.
