Seeding; sowing

The process of introducing fine crystals into the supersaturated syrup.

Cooked mass and mother liquor

In the crystallization apparatus, once the fine crystals have been seeded, the mixture is referred to as the "cooked mass," and the syrup surrounding the crystals is called the "mother liquor."

Building up the massecuite; running up the strike

In a batch-type cooking apparatus, the process of feeding in syrup while maintaining the supersaturation of the mother liquor in order to allow sugar to crystallize on the surface of the crystals and thus cause them to grow.

Tightening the strike
