5. Conclusion

For 5,000 years, vinegar has been a time-honored and trusted commodity, and has not escaped the evolution that has taken it from a basic product for preserving food and its medicinal virtues to the table of the world's greatest chefs. This family of vinegars has a surprising characteristic, to say the least, for it is certainly the only product in the world to present such a gap between the basic product, white vinegar, and the exceptional product, traditional balsamic vinegar. Indeed, while the price of white spirit vinegar is just €1/L, that of traditional 25-year-old balsamic vinegar is €1,500/L!
