3. Implementation

Given the significant variations in the various process stages, and the desire to group them together on the same diagram, the references are not systematically matched.

  • Step 1 – Harvest sorting

    When the harvest arrives at the winery, the grapes are sorted by various methods: manual sorting on a vibrating table or belt, or by automatic sorters with densimetric baths, high-flow air knives, rollers or optics, the latter based on the color and shape of the bunches of grapes. The grape varieties are varied, with Lambrusco, Ancelotta, Trebbiano, Berzemino, Sgavetta, Occhio di gatta and Sauvignon among the most common in Italy, and Palomino, Moscatel and Pedro Ximenez in Spain for sherry.
