5. Analytical controls by sector and interest

The purpose of the analyses carried out varies: some are decision aids during the manufacturing process, while others are regulatory or essential for assessing beverage quality and stability. More specific analyses in the event of particular problems are possible, but will not be described here. Generally speaking, flavour research remains costly and therefore marginal.

5.1 Biochemical controls
