5. Applications

The native polymer synthesized by the bacteria has no rheological properties relevant to industrial applications. It is the heat treatment that induces a functionality enabling various applications.

Depending on the gel strength of the polymer back into solution, a range of products with applications in various economic sectors can be developed.

5.1 Cosmetics

  • When gentle heat treatment is applied to the fermenting wort, the polymer is denatured and very partially hydrolyzed. . In solution and in the presence of salt, it forms a strong gel that is used in cosmetics as an anti-dark circle patch.
