Today, vegetable-based colors offer interesting complements to synthetic colors. Complementary, not alternative! Let's not forget that the world's color needs and population have evolved considerably since the 19th century. The world's agricultural surfaces would certainly have difficulty covering all needs, and we'd run the risk of amplifying the "food crops vs. industrial crops" debate. What's more, highly technical applications or those linked to specific environments would certainly not be satisfied.
However, although still reserved for niche markets, plant-based colors are arousing growing interest and have their place in the development of new natural and environmentally-friendly products.
Chemistry was born, in part, of the attraction for color, and today it must contribute to the development of plant colors through its specialties....
