1. Emulsion characterization method

First, we'll describe the physical phenomena underlying the principle of the method. Next, we'll examine the case of an emulsion and, finally, we'll describe the experimental test used to trace the emulsion's properties.

1.1 Principle

The principle is based on the laws of solidification-melting of the dispersed and continuous phases present in an emulsion. Changes of state are detected via the heat energies involved, by differential scanning calorimetry of the emulsion to be characterized. The analysis, described in more detail later, simply involves continuous cooling and heating of an undiluted emulsion sample. Analysis of the signals giving freezing-melting energies and temperatures can then be traced back to the emulsion's properties.
