The raw materials used in beer production are malt

, a semi-finished product derived from the germination of barley or wheat. Breweries are not responsible for malt production, but malting plants are. Malting consists in modifying the cereal in order to synthesize enzymes, including amylases, which will subsequently break down the starch. The synthesis of these enzymes is triggered by the germination of the cereal, following its hydration.
