2. Wheat flour production

The main ingredient of bread is soft wheat flour, and as such, it's appropriate to present the preliminary part of bread-making, i.e. the transformation of wheat into flour.

A wheat kernel is made up of three main parts: the husk (13-15% of the kernel weight), the floury kernel (82-84% of the kernel weight) and the germ (around 3% of the kernel weight). Once it reaches the mill, wheat undergoes two main stages:

  • For flour blending, a silo is dedicated to each variety of wheat or to each type of blend. The miller meticulously assembles the wheat according to the flour he wants to obtain.

    Wheat is cleaned and conditioned to achieve final cleanliness, thanks to a series of devices: an electromagnet (to remove ferrous metals), a de-stoner (to remove stones), a separator (to remove sand and straw),...
