2. Thermal decontamination treatments for food powders

Thermal treatments are commonly used to decontaminate foodstuffs, and food powders in particular. Optimizing these treatments involves studying and understanding microbial destruction kinetics and the parameters characterizing the thermoresistance of microorganisms.
