 INTRODUCTION

Today, demographics remain one of the key parameters in explaining the scale of food demand.

Many other factors (biological, economic, psychological, social, cultural) are involved in explaining the dynamics of food consumption. In this summary presentation, we have chosen a multi-disciplinary approach in an attempt to understand medium-term trends in food consumption.

After a historical analysis of food consumption patterns, we will identify the fundamental explanatory variables of consumption at macro-economic level, then offer an overview of the systems put in place to satisfy this demand and the problems they will have to face in the years to come, problems now apprehended through the concept of "sustainable development".
