2. Regulations

Below is Annex 1 to Council Directive 2001/112/EC of December 20, 2001 relating to fruit juices and certain similar products intended for human consumption. Several annotations (in italics), as well as the highlighting of crucial points (underlined) have been made by the authors. In the interests of simplification and reader comprehension, certain cross-references have been removed from the text.

2.1 Fruit juices

The fermentable but unfermented product obtained from healthy, ripe fruit (ed. by pressing, not refining), fresh or preserved by cold, of one species or several species in a mixture, having the characteristic color, aroma and taste of the fruit juice from which it comes. Fruit aromas, pulp and cells separated from the juice during processing can be restored....
