1. Specific features of the wine industry

1.1 Wine composition

Wine filtration goes back to the very origins of wine. The presence of cloudiness or a deposit at the bottom of the bottle is perceived by most consumers as a defect and a deterioration of the product. Over the centuries, filtration methods have evolved steadily, from various fabrics and the first industrial filters in the 18th century, to alluvial filters, filtration plates and membranes.

Wine is a fermented beverage made from fresh grapes. Sweet juice is extracted from the grape (mainly pulp and skin), and by diffusion and maceration, phenolic compounds, aroma markers and their precursors, organic acids, anions, cations, nitrogen compounds... are obtained.
