4. Conclusion

Mycotoxin risk management in cereals has developed considerably in recent years. This development has been made possible by societal concerns about food safety, but also by advances in agronomic knowledge brought about by applied research.

Legislation has been considerably fleshed out, and is set to be completed with the inclusion of toxins such as T-2 and HT-2. Animal feed legislation could also be clarified. Monitoring plans have been developed in line with advances in mycotoxin identification and assay. They should continue to take more mycotoxins into account, and progress is expected in terms of analysis costs. Finally, the technical management of grain risks should progress, from the field through to processing, as a result of the requirements of production chains, which will increasingly follow best practice guides and quality approaches.
