2. Storage, Receiving, and Washing of Beets

The steps leading up to the actual processing of the beets are an integral part of the process and must be given the same attention.

2.1 Storage

Beets are stored as follows:

  • along the edges of fields, in silos that look like simple piles but whose structure (height, width, orientation) is carefully designed to ensure proper ventilation throughout;

  • at the factory, where the target storage capacity for 2025 is equivalent to an 8-hour shift. This allows for continuous factory operations and results in higher-quality beets than in 2000, when storage times could exceed 48 hours. The factories are responsible for organizing the reception of the beets.
