2. Origins of transglutaminase and enzyme preparations

Transglutaminases are enzymes commonly found inside and outside cells. This determines the versatility and diversity of their functions. Enzymatic activity has been observed in many microorganisms as well as in plant and animal tissues. It should be noted that different forms of transglutaminases are found within the same organism. Animal and plant transglutaminases exhibit catalytic activity and biochemical properties similar to those of microbial transglutaminases, despite a lack of homology in amino acid composition
