The first biopreservation trials using marine lactic acid bacteria date back to the mid-1990s, with tests carried out on fresh whiting in two Nantes laboratories belonging to Ifremer and Oniris (formerly ENITIAA), which were unfortunately unsuccessful (unpublished data).
