2. Cold chain links
Having described the refrigeration processes that enable the product to be cooled to its preservation temperature, and which constitute the first link in the chain, it is now time to describe how the product will be able to preserve its quality and reach the consumer in the best possible way. The cold chain that follows the cooling of a raw product or the manufacture of a ready-made meal is in fact a succession of storage operations under controlled conditions inside refrigerated chambers, interrupted by transfers from one stage to another.
There's no such thing as a standard logistics chain, but rather a multitude of different stages: cold storage, refrigerated transport, logistics platforms, refrigerated sales units and household refrigerators. In the case of mass catering, the platforms are followed by cold storage before the product is processed and used....
